A great breakfast or snack with a piece of fruit. Each bliss ball is nutrient dense- packed with antioxidants, minerals, fibre, good fats and protein. Make a whole batch, store in the fridge and grab one as you head out the door. No more excuses that there is not enough time for breakfast! Peppermint Bliss Balls:
500 grams dates- pitted 2 handfuls raw almonds 1-2 handfuls of other raw nuts (brazil, walnuts, cashews) 1/3 cup cacao powder 1/4 cup cacao nibs (optional) 1/2 cup shredded coconut plus extra for coating (organic is best) 1-2 teaspoons peppermint essence 2 tablespoons flaxseed meal or LSA 1 handful of pepitas (optional) 1 tablespoon chia seeds (optional) water as needed (roughly 1/2 cup) 2 large tablespoons of coconut oil (doesn’t matter if it’s melted) Put all ingredients into a food processor, except the extra coconut and the water. Pulse and add water slowly, stopping occasionally to scrape down sides. Add water as needed until the mixture is combined and a little sticky and crumbly. Roll into even sized balls and roll in coconut. Store in a container in the fridge.
